High Protein Vegan Banana Mug Cake
Ingredients
45 grams Buckwheat flour
30 grams Vital wheat gluten
1 tbsp Brown sugar
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 tsp cinnamon
1/2 cup water
110 grams (ish) Banana, mashed (about 3/4 of a banana) plus more as a topping if you want
1 tsp apple cider vinegar
Directions
Combined all the dry ingredients in a medium/large, microwave safe mug and whisk together.
Add in the rest of the ingredients and mix until evenly combined
Add sliced bananas or nuts as a topping if you want
Cook in the microwave for 3 to 3 and 1/2 minutes
Take out and serve as is or eat with a maple syrup drizzle
