Protein Banana Mug Cake

You don’t even need to preheat your oven and it takes less than 10 minutes to make


High Protein Vegan Banana Mug Cake

Ingredients

  • 45 grams Buckwheat flour

  • 30 grams Vital wheat gluten

  • 1 tbsp Brown sugar

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1/2 tsp cinnamon

  • 1/2 cup water

  • 110 grams (ish) Banana, mashed (about 3/4 of a banana) plus more as a topping if you want

  • 1 tsp apple cider vinegar

Directions

  1. Combined all the dry ingredients in a medium/large, microwave safe mug and whisk together.

  2. Add in the rest of the ingredients and mix until evenly combined

  3. Add sliced bananas or nuts as a topping if you want

  4. Cook in the microwave for 3 to 3 and 1/2 minutes

  5. Take out and serve as is or eat with a maple syrup drizzle
