Chocolate Protein Granola
Is it just me, or when things are homemade are they just 10x better?
I started making my own granola a few years ago and it is so easy! I literally make this for myself every week right now.
It only has 6 ingredients and can be made in less than 30 minutes.

Ingredients
2 cups rolled oats
1/4 cup of liquid sweetener (i use agave, you could also use honey or maple syrup)
2/3 cup peanut butter
1 tsp vanilla extract
1 scoop chocolate protein powder (or other flavors if you want a different flavor of granola)
1/3 cup vegan chocolate chips
Optional: add in 1/4 cup chopped nuts or raisins, craisins, dried goji berries, etc.
Directions
In a large bowl, mix together your oats and protein powder. Preheat your oven to 350 degrees fahrenheit.
In a separate, medium size bowl, add in your sweetener, peanut butter and vanilla extract. Whisk this together until a consistent mixture is created. Then pour this over your oats and protein powder.
With a wooden spoon or spatula, mix the wet ingredients with the dry ingredients until it appears that all of the oats and protein powder have been coated.
Line a baking sheet with parchment paper or silicone baking sheets. Spread your granola mixture across the baking sheet evenly, creating a thin layer. Try to spread out and break up up large chunks with your spatula. Bake this for 15-20 minutes until the oats start to harden. Once you can smell it, it’s probably ready to come out.
Remove your granola from the oven and sprinkle your chocolate chips across the baking sheet. When the chocolate has melted, mix the granola again on the baking sheet and wait for the granola and chocolate to cool and harden.
Once the granola is cooled, store in an airtight container in your fridge for up to 2 weeks!
Eat the granola on its own, with milk, over yogurt, throw on your oats, or however you like! My favorite is to have it with Kite Hill Greek Style Yogurt and berries :)
