Three Bean and Tempeh Chili
FIBER FIBER FIBER is the theme for 2024 and the rest of our lives. This three beans and tempeh chili is packed with fiber in every bite. Each serving has about 22 grams of fiber, which is nearly the daily recommended intake for women per day! The recommended intake for women is 25 grams per day, and 38 grams for men.
Ingredients
1 block tempeh, cut into bite sized peices
1 can black beans, drained and rinsed
1 can chickpeas, drained and rinsed
1 can red kidney beans, drained and rinsed
1 can corn, drained and rinsed
1 can fire roasted tomatoes (or regular diced tomatoes, but I like the fire roasted for extra flavor)
1 onion, diced
1 red pepper, diced
2-3 cloves of garlic, minced
4 cups vegetable broth
Spices:
1 tbsp chili powder
1/2 tbsp cumin
1 tsp cayenne (do less if you don’t like it spicy)
1/2 tsp black pepper
1/2 tsp salt
Optional Add-Ons
Potatoes
Sweet potatoes
Quinoa
Farro
Rice
Vegan Cheese
Vegan Sour Cream
Directions
Throw all of the ingredients listed above in your crockpot; the beans, tempeh, veggies, vegetable broth, spices and the grains and potatoes if you choose to add them.
Set your crock pot to high for 4 hours or low for 8 hours.
Once your chili has finished cooking in the crockpot, serve immediately and top with cilantro, vegan cheese, vegan sour cream or with tortilla chips! You can also save this in your fridge for up to a week which is great for meal prepping!
